I really like this method of slow cooking at 275F then searing briefly then resting. It was perfectly cooked throughout and it was about 3" thick at the widest part.

But all that fat, I cut it off the chop and rendered it in the pan I used to sear it, ended up with a full cup of pork fat.

Now what, besides potatoes?

Vegetables (any kind of greens, kale, spinach, cabbage) enjoy a good saute in pork fat as do beans,

corn and onions. You can also use that fat to good use in corn bread, for eggs or even tofu stir-fry.

Oh thank you! I know it's a silly question to ask and I appreciate your ideas

I also have a tub of lard from Boccolone and plan to try pie crust with that sometime, once I know if I can eat fruits or not. Maybe I should make pasties instead....

Mmm, pastry with lard is a real treat. Surprisingly delicate, flaky and tasty. It would be equally

good in a savory (quiche, pasties, etc.) or sweet (fruit pie or tart) pastry. Mmmm, makes me wish we had a big old bucket right now.
