variations on a theme-S'mores

I just had the rehearsal dinner for my son's wedding and made these s'more bars for part of the dessert. They were really tasty and this morning I was watching Steve Raichlen make his version of s'mores with the chocolate inside the marshmallows.

It made me think of s'more soup we had --home made marshmallows on home made graham cracker sticks dipped in a thick type of hot chocolate. Another dessert I want to try from a local guy

was there a trick to cutting them w/o the marshmallows sticking to the knife? hot water? I always

have trouble with cutting things that have marshmallows added.
