I love to bake, but in the summer, not so much. However, here are some photos of some of the baking I did: Argentina-inspired pizza and Tea Rings.

 
The glorious Maysville Kentucky Transparent Pie

Four pies fresh out of the oven cooling to take the orchestra picnic in my grandmother's 1933 picnic basket. And don't call it chess pie.


Ingredients:
1/2 cup (1 stick) butter, melted
2 cups sugar
1 cup cream
4 eggs, beaten
2 tablespoons flour
1 teaspoon vanilla extract
1 unbaked (9-inch) pie shell
Instructions:
Beat butter and sugar in a mixing bowl. Add cream, and mix well. Beat in eggs. Stir in flour and vanilla. Pour into pie shell. Bake at 375 degrees for 40 minutes or until golden brown. Yields 8 servings.

Argentinian Pizza

The pizza in Buenos Aires is off the chart. With a huge Italian-descended population, they have amazing pizza which is nothing like America pizza. This is my attempt to recreate it.

Forget the traditional American toppings. Add Portuguese sauce, vegetables, Argentinian sausage ( which is very different than American sausage ), many green olives, basil leaves, roasted marconi peppers. And the cheese: Fontina and Gouda!

For this pizza I topped the dough with diced chicken, sausages, grilled marconi peppers, olives, sliced onion atop a bed of Portuguese sauce, and layered it with Gouda, Fontina, and Mozzarella.

Chess Pie – Some recipes contain sugar, eggs, butter, vinegar, cornmeal, vanilla and milk. Other recipes don’t call for cornmeal or vinegar, but flour instead. Then there are recipes that call for cornmeal but no vinegar. And let’s not forget, the recipes that don’t call for milk. It’s no wonder there’s a lot of confusion when it comes to Chess Pie, and some versions of Chess Pie look very much like Transparent Pie.

Transparent Pie – contains sugar, eggs, butter, vanilla and whipping cream.

 
Salsa Portuguesa

3 tbls. olive oil
2 onions, chopped
4 garlic cloves, minced
1 red bell pepper sliced
1 green bell pepper sliced
3 beefsteak tomatoes, chopped
4 sprigs fresh thyme
2 bay leaves
1 tbls dried oregano
1 tbls paprika
salt
pepper

Heat oil in pan. Add onionand cook to soften.

Add garlic and cook for 4 more minutes, stirring.

Add remaining ingredients. Stir, Cover and cook 15 minutes. Uncover. Stir and cook another 10-15 minutes until the mixture is fairly thick and most of the liquid has evaporated.
