Veal loin chops?

I picked up a couple of chops yesterday at the store and it suddenly occurred to me that I've never cooked a veal chop. Suggestions? Thanks.

 
I love veal chops. We cook them exactly like we cook a T-bone steak, usually BBQ but make sure you

don't overcook. Nice and pink on the inside. Delicious.

 
It's one of our favorites! Here's how we do it:

Salt and pepper the veal chops.

Add olive oil (1 to 2 Tbsp.) to skillet and set on medium-high heat.

Once oil shimmers, add veal chops. I don't exactly know how long to say how to cook on each side because it depends on thickness of chop. Let's just say until nicely browned. Turn over and cook until level of desired doneness.

Remove chops from skillet. Deglaze skillet with heavy cream (I'm guessing about 1/4 cup for two chops). Stir so cream picks up browned specs in pan, about 1 minute. Salt and pepper to taste. Spoon cream over chops!

GRILLED VEAL CHOPS MARINATED IN ROSEMARY AND GARLIC


Amount Measure Ingredient -- Preparation Method

4 veal loin chops -- about 3/4-inch thick
2 teaspoons minced garlic
1 1/2 tablespoons chopped fresh rosemary -- or 2 tsp. dried
Juice of half a lemon
3 tablespoons olive oil
1/2 teaspoon salt
1/2 teaspoon black pepper

Place the chops in a shallow baking dish. Mix together the garlic, rosemary, lemon, salt, pepper, and olive oil. Pour over the chops. Turn the chops to make certain both sides are coated. Cover and refrigerate at least 2 hours or up to 6 hours.

Heat grill, grill pan or skillet. Sprinkle both sides of chops with salt and pepper. Place on hot grill and cook about 5 minutes per side for medium rare. (Cooking time depends on the grill and the method.)
