Veg: Today's dinner is a baked potato

DH is away on a business trip, so I'm only cooking for one. I plan on buying three or four large potatoes and bake them all in the oven so we (DH and I) can re-heat one each tomorrow.

Since going vegetarian, I have made baked potatoes more often than I did before. It's easy and filling and it actually tastes great (yep, I love my carbs smileys/wink.gif.

I try not to use butter as a topping, so I have tried several different types:

•Salsa

•Plain yogurt mixed with diced cucumber and/or red onion OR tatziki ( add salt and pepper to taste)

•Sautéed mushrooms with a dash of cream, salt and pepper to taste.

•Pizza sauce and grated mozzarella (kids liked it, me not so much).

•Sauer cream mixed with fresh herbs ( my favorite is chives)

•Cheese (I use shredded Parmesan)and tomato with chopped basil.

•Cottage cheese with onion or chives.

•Cheese, grated and mixed with mayonnaise and spring onion,with a little sprinkle of crushed black pepper.

Tonight I'm having baked potato with Cottage cheese and chives. It's so good, especially served with white wine smileys/wink.gif

 
Do you ever make stuffed potatoes, ie, twice baked? Mash up the filling as finely or coarsely as

desired, and add sour cream (I use lowfat), shredded extra sharp cheddar (or cheese of choice), scallions, salt and freshly ground black pepper. Return to oven until heated through. Delicious!

 
I tried it once years ago. I don't rmember the exact recipe, but

I do remember that it involved a fair amount of butter and a huge amount og Parmesan cheese. It was so delicious!
I need to make stuffed potatoes again sometime soon smileys/smile.gif
