Vegan desserts anyone? Have to make something spectacular for the holiday.

Crazy Chocolate Cake has always gotten lots of great reviews. Was created during the 1940's when

eggs, butter, etc. were all being rationed. Anyway, it's completely vegan, and can be made as a 9-inch two-layer or one 9x13 inch cake. You can frost it with a dairy-free chocolate icing or glaze, etc. Let me know if you want the recipe.

 
Here's an idea: Fresh Figs With Chocolate and Almond Stuffing

FRESH FIGS WITH CHOCOLATE AND ALMOND STUFFING

Serving: 12

INGREDIENTS:

3/4 cup finely chopped unpeeled almonds
2-ounces, about 1/2 cup finely chopped semisweet chocolate
1 tablespoon sugar
1 1/2 tablespoons dark rum, or enough to lightly bind almonds and chocolate into a paste
12 ripe and juicy figs

DIRECTIONS:

1. Place almonds, chocolate and sugar in a bowl and stir together.

2. Add rum, and stir until mixture just holds together. Add a few more drops of rum as needed. It should form a rough-textured paste. If it doesn't hold together, pound mixture in a mortar and pestle or pulse briefly in a blender.

3. Trim stems off figs. Then, starting at stem end, cut figs 3/4 of the way down, making two incisions in the form of a cross. Carefully pinch the bottom of each fig to make the top open like a flower.

4. Gently stuff almond mixture into center of each fig. Press fig together to reshape it.

5. Arrange figs on a platter and serve. On a warm day, keep figs refrigerated until ready to serve.

Makes 12 stuffed figs to be eaten with the fingers.

 
Here ya go, cheez - Crazy Chocolate Cake...

(Note: If I were to make this to suit my taste, I would use less sugar, and sub 1 cup brewed espresso for one of the cups of water for a darker chocolate taste. I also would cut down the salt a little, but again, that's my personal taste).

CRAZY CHOCOLATE CAKE

2 1/2 cups flour
2 cups sugar
2 teaspoons baking soda
3/4 cup unsweetened cocoa
1 teaspoon salt
2 teaspoons vanilla
2 tablespoons vinegar
10 tablespoons vegetable oil (1/2 cup plus 2 Tbsp)
2 cups cold water

Combine all ingredients in a large bowl.
Beat on medium speed with mixer for about 2 minutes or until smooth and well mixed.
Pour into a greased and floured 13x9 baking pan.
Bake at 350 for 35-40 minutes or until done.
Frost with your favorite chocolate or cream cheese frosting.

Are there any vegans on the board?? I have a chocolate question...

My girlfriend's family is vegan and I know they don't eat chocolate (except cocoa powder). Is there something in chocolate chips that's forbidden?? I looked at the Trader Joe chips and they contain sugar, cocoa butter, chocolate liquor, soy lecithin and vanilla. I can't see anything bad in that.

I don't know the answer cheezz but why not use carob instead? I bet that would be acceptable

 
I don't know why. None of the ingredients ...

are animal products or made by animals. Lecithin other than soy is animal-based. Less-pure chocolate may have additives or emulsifiers that are animal products. Baker's Chocolate is "manufactured on quipment that processes milk," which could make it a no-no. And of course stay away from milk chocolate.
