Veggie Side Dish needed to go with Chicken Adobo

By request I am making Chicken Adobo (Filipino style).

Starter is lumpia.

Dessert is Ube Ice Cream (store bought from a Fil-Am market) with chocolate cake. The cake is kind of out of place, but we have 3 birthdays and a marriage to celebrate and I can't do it without cake smileys/smile.gif

I need a veggie to go with this...I was thinking maybe an Asian Slaw? Any suggestions???

 
Asian Slaw from Alton Brown

This one from Alton Brown:
1 (3-inch) piece ginger, grated fine
1/2 cup rice wine vinegar
1 tablespoon soy sauce
1 lime, juiced
2 tablespoons sesame oil
1/2 cup peanut butter
1 head Napa cabbage, sliced thin
1 red bell pepper, julienne fine
1 yellow bell pepper, julienne fine
2 serrano chiles, minced fine
1 large carrot, grated fine with a peeler
3 green onions, cut on the bias, all of white part and half of the green
2 tablespoons chiffonade cilantro
2 tablespoons chiffonade mint
1/2 teaspoon ground black pepper
In a small bowl, or food processor combine ginger, vinegar, soy sauce, lime juice, oil, and peanut butter. In a large bowl, combine all other ingredients and then toss with dressing.

Thai Slaw

Ingredients:
For the dressing
1 medium clove garlic, minced
1/4 cup freshly squeezed lime juice (from about 2 limes)
1 1/2 tablespoons coarsely chopped cilantro leaves
1 tablespoon freshly grated ginger root
1/4 teaspoon curry powder
1 teaspoon low-sodium soy sauce
1 teaspoon Asian-style chili paste
1 tablespoon canola oil
1 tablespoon light sesame oil
1 tablespoon sugar

For the salad
1/2 large seedless English cucumber, quartered lengthwise and coarsely chopped (about 1 cup)
1 cup shredded cabbage
1/4 cup shredded carrot
1 scallion, white and light-green parts, coarsely chopped
2 tablespoons coarsely chopped cilantro leaves
1/2 cup roasted, unsalted peanuts, coarsely chopped, for garnish (optional)
Directions:
For the dressing: Whisk together the garlic, lime juice, cilantro, ginger, curry powder, soy sauce, chili paste, oils and sugar in a medium bowl or deep measuring cup.
For the salad: Toss together the cucumber, cabbage, carrot, scallion and cilantro in a medium lidded container. Add the dressing to taste; close the lid and shake to mix well and coat evenly. Open to top the slaw with the chopped peanuts, if desired. Cover and refrigerate until ready to serve.

That sounds good. Here's another: Asian Slaw with Spicy Thai Vinaigrette

ASIAN SLAW WITH SPICY THAI VINAIGRETTE

Salad:
* 1 cup finely shredded green cabbage
* 3 cups finely shredded red cabbage
* 3 cups finely shredded napa cabbage
* 1/2 cup green onion, sliced
* 1/4 cup red bell pepper, chopped small
* 2 cups carrots, shredded
* kosher salt
* fresh ground black pepper

Spicy Thai Vinaigrette (use 1 cup)
* 1/3 cup rice wine vinegar
* 2 teaspoons fresh lime juice (to taste)
* 2-3 tablespoons chili-garlic sauce
* 1 1/2 teaspoons honey
* 1 teaspoon minced fresh ginger, peeled
* 1 teaspoon minced garlic
* 1 tablespoon fresh basil, chopped
* 1 tablespoon fresh mint leaves, chopped
* 1 tablespoon fresh cilantro leaves, chopped
* 1/4 teaspoon black pepper
* 1 1/2 teaspoons toasted sesame seeds
* 1/2 teaspoon ground coriander
* kosher salt
* 1 tablespoon toasted sesame oil
* 1/2 cup peanut oil (or corn oil)

1. Whisk all ingredients except oils in a large bowl. Slowly drizzle in oils while whisking. Taste and adjust seasoning with more salt and lime juice if needed.
2. Combine the vegetables in a large bowl, season with salt and pepper. Toss to mix thoroughly. Pour in Thai vinaigrette to taste and toss to mix. Adjust, adding more if desired.

SERVES 6

Heading down to civilization today so will pick up what I need for it.

 
This sounds delicious but the salad ingredient amounts seem kind of minimal..

It's basically on 2 cups of ingredients. Would you double/triple it to serve to 4 to 6 people?

Does my menu sound ok?

I have to say, Asian foods are not usually in my menu. I can make a pretty good Adobo (I learned from one of hubby's shipmates eons ago---after a couple of disasters).

Ube Ice Cream for dessert served with
Chocolate Birthday Cake

I keep going to my Iowa roots and asking "Where's the bread?" Or even my California roots and "Where's the tortilla?"

 
I made them in the food processor and they were awesome!

Rolling dough balls in breadcrumbs (I used panko) seemed a bit weird, but they were very good.

 
She buys the rolls and freezes them! They are packaged 2 in a pack, already baked.

She microwaves them 15 seconds. Delicious!
