with onion sauce. It's just long carmelized onions that eventually turn into a sauce. But I made it with all Vidalias as a bit of an experiment.

It was just heavenly. So sweet one could have sworn that there was sugar in it. I make this often but it has never been so good with just the ordinary guys.

I also cooked the onions for 1 1/2 hours. Long but worth it.

mmmm....the onion pasta sauce sounds lovely. please post the recipe! At the store yesterday, I saw lots of large Vidalia onions, i was tempted to buy quite a few, but didn't know what i would do with them.

 
Here I sit with her book on my lap & I don't have to type it out. That is the recipe. I was not

concerned about the strands of onion. I prefer it when it makes a 'sauce', when the onion seems to disappear into a mass.

This time, the first time ever, the onions did not turn really golden. No matter. It was still the best ever.
