"creamy" texture when melted (like on a sandwich or scrambled eggs)? Thanks.

PS: Sorry to not provide more specific information, but they all sort of looked alike: basically...white.

Must have been at least 8 different blocks of white cheese.

 
Quesadilla or Oaxaca Chihauha or Asadero

All are mild and mozzarella or jack-like- Quesadillo & Asadero are often the same cheese. I really like La Vaquita Quesadillo if they have it. It melts much like good Munster & is very rich & unctuous.

 
You're welcome. They are fun to try, but for melting cheeses I don't think there is

enough difference between the Mexican cheese & Monterrey Jack or Mozzarella to justify the price, but see what you think. I really do like queso fresco, which is the very mild crumbling cheese used for garnishes.
