Warm Weekend Six

Yesterday (and TODAY!! 65 degrees!) was a beautiful day out here. I was even barefoot outside half the morning putting away the Christmas decorations and cleaning up the leaves I missed, while DH wrapped up the evergreen trees for the winter (we shoulda' done that in November). Only a lifelong northerner could consider sunny 57 degrees "barefoot weather" I guess, but it felt so good after all of the snow.

Then I made a large pot of navy bean soup from a frozen ham hock from Christmas, along with some jalapeno cornbread to go with it.

I realized that my Polish cake was fig-flavored. It smelled just like Fig Newtons when I opened it up the other day. Now to find a recipe. I'm not even going to attempt the layers (see image). If it turns out good, I will post if anyone is interested.

Supper tonight will be poached salmon with tarragon-mustard sauce. An old Finnish recipe from a former professor. Will make cheddar risotto, broccoli rabe, and steamed carrots in my new steamer - microwavable - to go with it. (Thinking outloud here!) Gees, that wounds like a lot of food...

Also making more lime meltaway cookies for a baby shower on Friday. They are so light and delicate, I figured it might be a nice dessert with coffee.

'Going to an organ concert this afternoon, at a Welsh church where my grandparents and great-grandparents used to go. I've been by there many times, but never been inside. 'Should be nice.

Dawn, I'm on my way. We have -15F here....

1) It's cold.
2) I spent the weekend in my mountain cabin. I went cross country skiing today, so I had dark chocolate with my tea this evening. I deserved it.
3) I made rabolita - Italian white bean and kale soup - for dinner today. Nothing tastes better than hot soup on a cold day.
4) Just realized I can mix left over fresh herbs with Philadelphia cream cheese and get the best herb cheese out of it. I love dill, and had toast with dill chream cheese on top today. I'm definitely making more of this stuff.
5) Did I tell you it's -15F here?
6) It's too cold for comfort. Hot tea and a movie is about the only thing I can think of for tonight. Happy Sunday smileys/smile.gif

 
Hey, we were supposed to have that weather!!! Instead we had 54 degrees with fairly heavy fog all

day. Our weatherman really goofed. And I had yard work plans because the weather was supposed to be so nice. So I did a little bit of cooking.

One of my New Year promises is to try to learn how to make decent bread. So this weekend I tried one of "cold fermentation" breads, Wild Rice and Onion Bread from Peter Reinhart. I started it Sat am and it sat in the fridge over night. Today I took it out, shaped it, proofed it and baked it. I think it turned out okay.

From Good to the Grain by Kim Boyce I tried Carrot Muffins with spelt and oat bran. These are very good.

From Cooking Light Jan issue I tried the Chicken with Lemongrass Stir Fry sorta. I am determined to use up what is in the house so I had to make a lot of substitutions. It turned out really, really good anyway!!!

Well, guess I had a weekend 3!!

Thanks Dawn and barb, we did a kitchen redo about 7 years ago. I wanted something

interesting between the stove top and hood. It's a fairly small kitchen so I didn't feel like I could do a busy motif of any sort so we just had the tile guy frame in a big square of the diamond shaped tiles centered over the stove top. A little interest but sorta subdued for a small space!
