Ours was cranberry relish:

1 lime

1 (12-oz) bag fresh cranberries

1 medium red onion, chopped

1/4-1/2 cup sugar

2 tblsps minced green bell pepper

Grate about a teaspoon of zest, then squeeze 2 tablespopons from the lime.

Process cranberries with the zest, juice, onion, sugar, and pepper until finely chopped.

Chill relish, covered, at least 2 hours before serving.

Makes about 2 1/2 cups

 
roasted carrots

People kept asking how to make them, and didn't believe it when I said they were really easy.
Hardly a recipe, but:
Peeled about 16 big carrots, cut in chunks (the biggest split so they weren't so thick). I rolled them in a couple of tablespoons of olive oil, and squeezed half a lime over them, plus a sprinkling of kosher salt. I roasted them uncovered for about 40 minutes (I fork tested them to make sure they were done), then tossed them with a couple of tablespoons of brown sugar. I made them a day ahead and microwaved them when I went to my sister's house.

 
Sounds excellent--roast is 450-500F, right? I'd like to try this, this weekend
