Hi Cyn, hope you are doing well... not sure about a thread here, but

here are a few of our stand-bys when no one here feels like spending a lot of time cooking:

-stir-fry chicken, beef of pork with lotsa vegetables and low-sodium soy sauce

-hummus sandwiches on whole wheat or pumpernickel bread topped with mushroom bruschetta (from salad bar)

-ground turkey or chicken patties with yogurt cucumber sauce

-grilled tuna and tomato sandwiches

-whole wheat elbow macaroni (I hear Dreamfield's is good) and marinara sauce (or ground chuck, sauteed), cheese, and fresh herbs

-English muffin pizzas under the broiler or toaster oven

-pan-fried non-breaded fish filets

On the other side of the spectrum, how about slow-cooker (little work) meals? Lots of threads for those here.

Have you heard of any sources in upstate NY for groceries that carry pink-slime-free beef? Wegmans hadn't heard last time I checked and none of the ones I heard were available around here.

Impatient.
We buy ground beef frm a place that supplies local restaurants. Don't know if it's slime free but it is delicious! They break down the beef and grind it several times a day.
