So easy and everyone loved it. One of those stupidly simple dinners, but the results were very tasty. I crumbled a few corn tortilla chips in mine and skipped the sour cream.

Pork Verde Chili

Amount Measure Ingredient -- Preparation Method

2 pounds pork stew meat17 ounces canned black beans -- drained

17 ounces canned pinto beans -- drained

27 ounces green enchilada sauce

17 ounces petite diced tomatoes

1 large onion -- chopped

1 green pepper -- chopped

2 stalks celery -- chopped

1 packet William's Chicken Chili Seasoning Mix

1 bunch cilantro -- chopped

2 tablespoons olive oil

Cot the pork into 1 inc pieces. Brown the pork in the olive oil. Add the onions, green pepper and celery to the pork and cook until softened. Add the enchilada sauce, beans and tomatoes. Stir well and add the seasoning packet, stir, cover and simmer until pork is tender. When ready to serve addchopped fresh cilantro and serve. Garnish with sour cream. If you cannot find the seasoning packet sub some green onions, cumin and oregano, to taste.
