Wedding Cake help....One of my DD is getting married next year. I would very much like to......

make the cake...or better yet get the bakery to make the fruit cake bases which are traditional from where we are and then I will ice it in royal icing...I would like to be able to ship in some flowers if possible.....(it is just too darn hot to do this in my unairconditioned house now during low season and high season I am very busy...)...

If anyone can guide me to a really good source of edible flowers that will ship, please let me know.

 
Joannie, I did this for my sister's wedding...

except that I had made the cake layers, several months before the wedding, wrapped them and kept soaked in brandy.

I looked for a bakery to do the icing for me, but wasn't able to find one that would help out for less than a king's ransom.

I ended up making several huge batches of buttercream and just doing a plain skim-coating on the stacked layers.

The frosted cake was then decorated with fresh, edible flowers for the reception.

The fruit cake recipe I used was one I had made a couple of times previously, but never in that quantity.

My biggest problem was figuring out how many batches I needed to mix up to fill the 12", 10", 8" and 6" pans!

Have fun with this...I did and it must have been a good cake. Sister and her dh recently celebrated 24th anniversary.

Iknow what I want to do but cant seem to find flowers any where.....dont want to use butter cream. We like the royal iced cakes....I ahve a few months to do this, I guess.
