Week 3 menu

Okay, I'm going for more "man food"...with veg this week.

- Green Chile Chicken Enchiladas w/ Salad of Avocado, Tomato and Toasted Cumin Vinaigrette

- Asian Salmon Rice Bowls (there's a bed of spinach on top of the rice.)

- Baked Orechetti w/ Pork Sugo with Mixed Green Salad

- Japanese Fried Ginger Chicken with Ottolenghi's Soba Noodles, Eggplant, and Mango (sub soba noodles for udon, which are gluten-free)

- Greek Leg of Lamb stuffed with Greens and on the side, Herb Stuffed Tomatoes (can have the Mixed Green Salad here too.)

 
Very nice! I recall you are making gluten free and lots of veggies? I have been having fun with my new gadget that makes Zoodles. It has been

helpful introducing more veggies into our menu.

 
Although now that I post that, I also recall that their kitchen was filled with pizza boxes!

I got a chance to ask about that. Apparently they had friends over the night before for a

game night. "I only had one piece!" smileys/smile.gif
