Weekend Six, everyone

1) I just got home from Iceland, were I bought a cookbook called "Smáréttir Nönnu" with recipes for fingramatur, forréttir and freistingar (appetizers and Hors d'oeuvres). The pictures are wonderful, and thank goodness I also bought a dictionary smileys/wink.gif

2. DH has cooked dinner two days in a row. Hoorah! smileys/smile.gif. Last night he made tagliatelle with a salmon cream sauce. It was really good.

3. The weather outside is rainy so I'm going to bake today. Crisp bread is on top of my list.

4. Is there such a thing as low carb bagels, by the way? (I have found some recipes on the net, but most of what I've seen is not bagels. Call them rolls, bread or whatever, but they are nowhere near bagels).

5. Can't wait to make the "blathdeigskörfur med berjum" in my new cookbook. Once I have made it and tasted it, I'll tell you what it is.

6. I hope the rain stops soon...

Hoping to get it all crammed in before the predicted monsoons hit later today. (We invariably lose power!)
On that note, gotta go fill the bathtub--no power=no water!
Breaking low carb--hoping to jumpstart my stall.
Went to Arthur Ave yesterday to get good bread--hey if you're gonna cheat, may as well eat the good stuff!

 
I really don't have anything exciting for the 6. I noticed erin's post re: the rain

and watched the forcast, I immediately told dh this morning that we have to go to the store... We need milk, ground chicken (for laarb), ground beef (for nachos) chips, soda (for dh), ice cream, etc... We may be hit with alot of rain, and I need to have my fixins...

OK, So, the news chanels and I exaggerated about the amount! BUT, I am prepared

 
I've lost my mojo, heck I'm losing everything even my mind I think

Haven't been around much not even lurking much. I've had a lot going on in every part of my life that to by honest I am feeling very overwhelmed, stressed and very depressed. Cooking has even lost not only it's fun and creativity but I can't pull off flavors when I want them lately. And yesterday I think everything I touched was cursed - seriously and you have no idea how much I really mean that. I finally gave up and sat in my chair the rest of the day/night not wanting to tempt fate any more.

So, it's sunny today and I am going to try to restart not only this weekend but everything. I can't go on like this. So here is my six

1) I have to go up to the office to move my stuff from my old desk upstairs in Design & Construction to my new smaller desk downstairs with Support Services (I was basically demoted March 1st after some dirty dealings by others - honestly! Long story).
2)Need to have some fun/me time while I am out. Missed all the fun things yesterday. I am craving crawfish - maybe I should drive to my favorite joint just north of town and have an order or two with a drink or two while looking out over Drake's Creek Marina off Old Hickory Lake. And maybe a stop to pick up some of the herbs left from the Herb Society's sale that I missed yesterday. And who knows, maybe a run through the Farmer's Market to see what I can find and shape my menu around that.
3) REALLY need to start doing menus for the week and prep or cooking in advance to help with the diabetes/weight loss/eosinophilic esphagitis. So I need to figure out what I am fixing - mainly trying to stay low carb as well as control calories.
4) Finish laundry
5) Promised DD that I would try to recreate the cheese wontons (crab rangoon) from this place down by MS State University that she fell in love with. Not sure what makes 'Mama Jean's' so special but there are rave reviews all over the internet. If anyone has any great recipes or ideas let me know - DD says it's the wrapper, filling and sauce. I purchased two brands of wrappers last night so I think one definitely looks thinner (which is what we are looking for) than the other but I'll still take recommendations on brands. The filling is more savory than the five versions she has tried here. And it's smooth, liquidy and not chunky.
6) Work on taking a few steps every day to improve: my health by working out; my skills/employment situation by taking courses provided through my employer, reading articles and such to keep on top of trends and such, putting out a few resumes, keeping in touch with folks in the industry; my stress level by checking things off that I KNOW I have to get done; and my enjoyment level by doing something for me time every day even if it's fifteen minutes of time away from everyone, the phones, and such.

 
I'm so sorry things are difficult for you right now. You'll be in my thoughts.

If it is any consolation, my cooking (and just about everything) goes to hell when I'm stressed and unhappy. I think I just can't maintain the level of concentration it takes to do justice to things. Just keep doing what you're doing and be kind to yourself. The tech industry tends to be nasty - sorry you're caught up in the mess.

 
Seriously. It's nuts.

I finally just tell mine, "Well, you have two PhDs, so I'm sure SOMEHOW you'll be able to find things." Then there's a lot of emailing back-and-forth once he arrives in the store. There ought to be an app...

 
One day at a time Missy. I find that cleaning your home and planning for a nice dinner/lunch/

breakfast (albeit simple) will give you some good exercise and motivation to carry on. Simple, but effective for me.

Carry on and keep the chin up Missy. I've been there and know what you're going through in different ways.
