Weekend Six?

I always like to hear what a typical - or sometimes, not so typical - weekend is for y'all in different parts of the country/world!

~ making sushi this morning (carrot, cucumber, and red pepper)

~ yesterday was the big bake sale - see photo below. I made the skeletons by drawing them directly on the frosted cupcakes with white chocolate, melted in a bottle

~ making a pineapple cake for DH's birthday on Tuesday... all this talk about pineapples had me craving it

~ from the parking lot, I measured the distance from one end of my favorite grocery store to the other and found it was .2 mile wide. No wonder I'm pooped after I shop!

~ making something Thai for dinner tonight, with coconut rice (p.s. Thai basil pepper beef over coc rice)

~ got a CD listing early Glamorgan (Wales) births, so I'll be trying to sort out my great-grandparents' families again

~ found my "~" key, but lost my cell phone again :eek:0

Terrific, Dawn! Love the skeletons! Not quite a Weekend 6 for me...

If I count Thursday as my weekend (it was my last day at work so kind of...loosely...will go with it)

1. Thursday we did the Filipino menu (thanks to all for the help). Lumpia, Chicken Adobo, Asian Slaw (thanks to Meryl), Pandesal Rolls (thanks to Pat-No Cal)and Ube Ice Cream. Son's girlfriend made the chocolate cake for me and did a very good job.

2. One couple came back on Friday for leftovers, so I think Thursday dinner went well!

3. Dawn's Creamy Chicken Enchiladas for lunch yesterday.

4. Went to a going away party for one of hubby's underlings and the hostess served Chicken Haystacks. Totally new to me. Pretty good, too. It's served as an "assemble your own" shredded chicken in a sauce, rice, chow mien noodles, grated cheese, peas and pineapple. Hawaiian I believe.

5. Today it's dog class, we have a Halloween Pawty and they will be coming in costume. Our customary pre-class lunch to which I'll be bringing store bought cookies (shhhhhh)

And this is it until probably the first of the year as far as any real cooking goes.

 
My weekend 6 (actually my Sunday six)

Spent Saturday working in the yard and running errands.... so I did all the cooking today...

* my brother have given me tons of apples, so last week I made a batch of Steve's apple butter -- awesome stuff. So - this week I made 2 more batches---- and I still have more apples left!!!! Oh - and hubby made apple quick bread during the week.

* 3 batches of cinnabon popcorn. Wrapping that up and treating everyone at work.

* fennel was back at the farm this week, so tonight's dinner will be talapia on a bed of sauted fennel

So - 2 batches apple butter, 3 batches popcord and 1 fish = my weekend six

And if you saw Everyday Cooking over the weekend, it might look familiar, with minor changes:

1 1/2 cups rice
1/4 cup coconut cream
1 3/4 cup water
1 tablespoon vegetable oil
2 garlic cloves, chopped
1 red sweet pepper, sliced
1 small hot pepper, chopped
1 pound ground beef chuck
3 tablespoons low-sodium soy sauce
1/4 cup ginger vinaigrette
1/2 cup loosely packed torn fresh basil leaves
chopped peanuts and lime wedges, optional

In a medium saucepan, combine rice, coconut cream, and water. Cover and bring to a boil; lower heat, cover and cook until liquid is absorbed, about 25 minutes.

When rice is almost done, heat a wok over high heat. Add oil, garlic, and half the hot peppers. Cook, stirring constantly, about 15 seconds. Add beef and cook, breaking up meat with a wooden spoon until browned, about 5 minutes. Add soy sauce and ginger vinaigrette, and cook 30 more seconds.

Remove from heat and add basil and remaining hot peppers; stir. Serve beef over coconut rice topped with peanuts and lime wedges.

 
My ribs hurt Ang! Lol Somehow this reminds me of a co-worker from way back that

claimed to be on a diet but would often devour what looked to be a 2 lb. plus chef salad with full-calorie dressing for lunch. Puh-leez!
