to serve 60, and poof, it's gone!

So, again, I am doing a dinner for 60 in January and I have a volunteer to make dessert. She's going to make the warm walnut brownie pudding and, to make life easier for her, I have been doing the math to upscale the recipe.

The original recipe serves 8-10 in an 8x8 pan, so I am thinking to ensure the recipe doesn't get wonky, that she should make 3 double batches, a double batch would fit in a 9x13 casserole or the large turkey roaster heavy foil pans.

Your thoughts, please?

 
A question for consideration, as I do not know the answer, but does the cooking timing change, and does your

friend need that info?

 
When I make dessert in an 8x8' pan, I slice so I have a total of 9 servings; ergo that's 18 portions

for a double recipe that would be baked in a 9x13" pan. Three 9x13" pans = 18 X 3 = 54 so I would make 3 double recipes + 1 single recipe to equal 63 portions of dessert. In my experience cutting 10 portions from an 8x8" pan is kinda small UNLESS each serving to have a dip of ice cream or frozen yogurt atop or alongside. But maybe smallish is okay for the group you'll be serving. Have you made this before so you know what a single portion will look like after plating when you slice each 8x8" pan into 10? Just my opinion.....

 
All the ads are not specific to magazines There is more ad time on TV than there is actual programs

Same with the Internet, ads all over and any product you look up then follows you everywhere. It is all 'in you face" ads, all the time. That is how the companies make the money to put out the magazine, TV programming, etc.

We have a great local magazine here, and they also have a store. They only carry local items made by locals all around our area. It is very upscale. The ads in their magazine are awesome. They go to a lot of trouble, and time to make them colorful and interesting and very artsy. People here actually enjoy the ads as much as they do the articles, pictures and stories.

I agree with you on the ads for drugs, it is ridiculous. Does anyone really read them? I bet not.

 
Just a note about the turkey roaster which I know you'll notice--it is not smooth on the

bottom (or many aren't). There are cake mix foil pans that would be the right size. Check the dollar store.

 
So I tested out the doubled recipe, and found that there was way too much syrup

this was after spilling a bunch of it on the stove as well. Think I need to scale back the liquids portion, so I'l going to try that again this weekend.

The cake portion had the correct consistency and taste, which is good.

The bottom of the pan doesn't need to be flat, because the batter rises up and the syrup sinks, but I will be sure to mention that to my volunteer.
