So, I stopped by the house to drop off the final dish for this week (she lives close and I'm having a tough time preparing all that food in one day.) I have a code to the house, and turned the corner into the kitchen, finding empty pizza boxes on the counter. Opening the fridge, it is completely full. I have to shuffle to include the dish I brought over. I was asked to prepare enough food for lunch and dinner, but nearly all the food I brought on Monday was still there.

I haven't had a chance to discuss it with them, but I suspect shifting to the new "healthy" lifestyle is tougher than expected--even if ready to eat food is in their own fridge!

She has told me she really likes the food. Maybe it's too abrupt of a shift for hubs? That's my guess.

We'll see how this shakes out....

 
Apparently it is a learning curve. She went to the doctor yesterday and got some

somewhat serious results. "Change your diet or we'll have to put you on medication." The pizza, apparently, was a 'cheat' day (spontaneous, not factored into the schedule.)

The doctor's follow up test is in 8 weeks. Fingers crossed, we'll blow his mind! smileys/smile.gif

 
Maybe it was too different--a culture shock in addition to being heatlthy?

Can you do "comfort food" healthy?
Meatloaf made with turkey (absolutely my preference always now). Broiled chicken breasts and good veggi sides?
The idea of pizza and calzone with gluten free flour. How about a panzanella (with the fresh tomatoes now) with a shrimp garnish.
DH asked what quinoa was the other day and I made the mistake of saying it is a healthy grain--DD glared at me and said 'way to go Mom, he'll never order it now!! LOL

A kind of comfort food reinvented, and other things that I think will work really well.

Finding that groove is a bit like dating. A lot of trial and error, trying to hone in on the perfect mix. Thankfully both parties are working hard at trying to nail it down. The wife was super excited about a tabouli I made with red quinoa instead of bulgur...and said a shout out about it on Facebook. Progress. smileys/smile.gif

Maybe you'll find a couple of "hits" and can put these into a rotation while

you look for more to add to them. A quinoa taboulleh sounds great and would go with her low carb. The excitement is a big plus for sure. Forge on.
