Went to a gala dinner where one of the plates was 'Roasted Marrow Bone" anyone ever made this???

The entire dinner was excellent and each dish was very different but this dish brought comments as although excellent it was thought to be more a peasant sort of dish (our Russian guests discription). The sauce was a rasberry balsamic reduction...truly excellent, if rich.

One of the other outstanding dishes was 'Sunchoke Vichyssoise' very creamy.

The rack of lamb was to die for served with a 'Tagine' of lamb...this was just meat, sort of stew like, served in a tot glass on the side with spinach and spaetzle...BUT the whole meal was very salty which was a pity. (It's the HBP that my DH has that is making us find so many meals at resturants are too salty.)

 
except for the salty,sounds wonderful.haven't prepared or eaten marrow bone, will be watching here

 
My German Mom considered the marrow to be a delicacy as well. She would not...

...prepare it as a dish, but she would always dip it out of the marrow bones left over from any meal of beef shanks or the round bone from a braised round steak.

No marrow left un-eaten was Mom's motto.

Hi Michael, that was my dad's fav way of eating the marrow...he would suck at the bone with such

slurpy delight. I was never taken with them until now...OHHH it was delicious.

 
An acquired taste, some say. (Not I!) The bone is sometimes served with

toast and a narrow silver marrow spoon. Very English. (Gentlemen often carried marrow spoons with them, in matching containers, and these are now collectibles.) I can't remember whether there are traditional accompaniments.

A lot of recipes also call for the marrow to be scooped out and stirred into the sauce, such as with osso buco. Sort of a built-in demi-glace!

 
Mmmmm, I absolutely love eating the marrow from the osso buco bones. Now you've

got me craving it...lol.

 
Whenever I make osso bucco, I am under advice to look for the most marrow so that

H can get his cholesterol overdose. He does love it. I think I mentioned a meal at a wonderful restaurant in Amsterdam where he ordered a main course of marrow. It was a fine meal, according to him, but although I say I'm not much to look after my health, I drew the line there.

Mmmm, marrow...

I put marrow bones in my stock base when I'm making consommé. It adds a wonderful richness.

They also make a great addition to Bolognese sauce.
