and the chef's father was a chef at Maxim's! Talk about learning from the best!
Although the line cook did overcook my biftec the pastry chef made an amazing tarte tatin using quince instead of apples. It was divine. I haven't seen quince yet in season but since I can eat quince without food allergy issues I am really thinking now about recreating this dessert, and also my beloved applesauce tart from Julia Child using a buttery (and possibly more sweetened) quince puree and thinly sliced quince on top. I might have to poach the quince slices first though, what do you think?
