We've been supping on Pat's cranberry salad this week. My dried cranberries

were not good enough so I used fresh and then fresh-frozen. They worked perfectly. Tried it once with avocado. And in each occasion, I used blue cheese as we felt it complemented the snappy-sour flavour of the cranberries.

It was terrific with arugula as well.

Love it.

By the way, did you know that racoons won't eat fresh cranberries? Nor will any of the other critters. My, how fascinating my life is!

Maybe the cranberries are too tart for the critters...who knew. Do you cook

the fresh cranberries first before adding to the salad?

I finally gave in and made a triple recipe of the dressing for my wife. She's...

...on a cranberry walnut salad fixation.

I use Craisins. We get the duffle-bag size at Costco and my kids eat them for snacks. They are lightly sweetened and not too sweet for the salad.

I wonder what a bit of walnut oil would do in place of some of the olive oil?

No, just cut them in half. Frozen, the took a moment to soften in warm water & were easy to cut.
