What are 'casserole' beans?

Visiting in Texas, my aunt cooked casserole beans from a dried bean. I'd never heard of them and suspect this is a regional name. What would I shop for in Minnesota to get the same thing, any ideas? They were small and white, and she said they cooked up quickly.

I believe it's Great Northerns that are the only ones that do not have to be presoaked.

I don't trust my memory and always check before I open the bag. ANd you can buy them easily in Minn.

So I suspect, from the way you mention her cooking them, that they would be Great Northerns.

I think soaking just shortens the cooking time. You can cook any bean long enough to

get it done. Never heard that specifically about Great Northern. Interesting.

I use the quick soak method usually--bring to a boil, turn off and let sit for an hour.

I don't soak lentils or split peas. Recently did a 15 bean dish with lamb in the pressure cooker. Done in 25 minutes. I am loving the PC for that kind of thing.
