HEARTY POTATO SAUERKRAUT SOUP IN CROCKPOT
4 cups chicken broth
1 (10¾ oz.) can cream of mushroom soup
8 oz. fresh mushrooms, sliced
1 (16 oz.) can sauerkraut, rinsed and drained
1 medium potato, cut in small cubes
2 medium carrots, chopped
1 medium onion, chopped
2 stalks celery, chopped
¾ lb. smoked Polish sausage, cubed
½ cup chicken, chopped and cooked
2 tbsps. vinegar
2 tsps. dry dill weed
½ tsp. pepper
2 slices bacon, cooked and crumbled (optional)
2 hard cooked eggs, chopped (optional)
Put ingredients (except bacon and eggs) in crackpot. Cover. Cook on low for 10-12 hours or till vegetables are tender. Skim off fat before serving. Sprinkle each serving with bacon and egg.
