What can I do with cold lamb?

DH wanted leg of lamb last night, and with only 3 of us there's lots left over even with sandwiches for lunch. Any suggestions?

I'm very sad today because my beautiful cat has disappeared. He's not at the shelter, and the neighbors haven't seen him.

Lamb Quesadillas with Apple mint Salsa

I had the same leftover lamb problem.
I made quesadillas with thinly sliced lamb and Montery Jack cheese in a folded over flour tortilla, and then melted in the microwave. Then I made up this salsa. It was really good!

Apple Mint Salsa
3 apples, unpeeled & chopped
1/2 medium green pepper, chopped
1/4 medium white onion, chopped
1/2 small jalapeno, chopped
6 fresh mint leaves, chopped
4 tablespoons apple-mint jelly, melted in microwave
Mix together. Add more jelly if needed. Refrigerate for at least one hour before serving.

I hope you find your beautiful kitty, I'm keeping good thoughts for you.

Oh he's beautiful! Don't worry, more than likely he will show up after

a night or two out. I was scared to death mine was gone for good a few years ago when she disappeared overnight... only to have her crying (wailing) at the door the next afternoon, after I had left work early and had just come back from putting up posters about her. We think she got stuck in a neighbor's garage. Either that, or she was on a long, lazy walk, and when it started raining she headed for home. Soaked, and hungry, but fine.

He'll be fine, Lana!! How old is he?

Oh what a cutie!

My cats do that every once in awhile too and it makes me crazy. Just when I am ready to go and walk the streets of our neighborhood, they will show up on the back deck and lay down and look at me like, whaaaaaaaaaat? I will keep good thought for your kitty too. I started training my cats to come in by tapping on the cat food can. It works pretty good most of the time.

Sometimes cats disappear for a day or two. Hang in.

We once had our cat disappear for a week. I'm sure she got locked in someone's garage or shed. She wandered home looking a little worse for wear as she had lost a lot of weight.

A week? I'd have been climbing the walls! But some ideas, Lana, if you can

leave an article of your clothing outside, they say the scent may draw them back home. Also the shaking of a Pounce can, a bowl of cat food on the front steps, anything that you can think of to entice him back home.

He's probably just sleeping off an all-nighter though!) Keeping you in my thoughts and prayers.

See below for a use for your leftover lamb too!

Thanks for the sympathy and suggestions

He normally comes when I call, so I have been calling him regularly, and will go on doing that. DH has trained all our cats to respond to Portuguese, so I yell out what sounds like gibberish, I don't know what the neighbors think. Still, it's better than calling his name, which is Narcissus. (His sister is Echo.) He's been gone for 3 days now, which has never happened, but I'll leave things outside, call and go on checking the shelters. He has a microchip, and they promised me that they scan all the cats. We've put posters up. I am afraid that someone's dog got him, and the owners are afraid to tell me, but he's really big and heavy and has a good set of strong claws, so he can protect himself. Even DH, who pretends that the cats are just a nuisance, has been checking outside every 20 minutes or so. I do hope that you are all right, and he turns up.

OH dear. How about the neighbours' garages? Mine was in there for 2 days. Also a cold lamb salad

from Silver Palate with romaine, I think. We liked it lots. Has a toasted hazelnut dressing. If you're interested in it, I'll hunt it up.

Once in HF, Pushkin was gone for a couple of days. My son and I

were outside one night looking at the comet and I heard some thumping in my car. Pushkin had gone inside for a nap when the door was open and I hadn't noticed. He used my bushel basket that had garden tools (orchard picking stuff) for his toilet, so he hadn't even messed up the car. He sure was mad at me for days, though!!! I think he must have been throwing himself at the back window to make enough noise for us to hear him!

Mine did that too! Found her in the car the next day... they do get themselves into some trouble

sometimes. If it'a any consolation, Lana, my cats can outrun any dog that happens to get loose in our neighborhood. He'll show up.

Just another thought for the lamb - put a few pieces out on the front porch for Narcissus...

Seriously! He might smell it from wherever he may be...

You were all right! He came back!

He just turned up outside the door. We think he must have been trapped in a garage or screen room, and the people went away for a long weekend. He's fine, just hungry, and very indignant that we are not letting him out for a while.

Thanks for all your good thoughts! (And the recipes)
