What can I do with leftover shredded beef?

Tonight's dinner was shredded beef in warm tortillas so I don't really want to make enchlidas now. Any other suggestions?

I could make soup - but it would have to be purchased broth.

Kids hate chili. Hmmmm

I bought some of Swansons Beef Stock today and was so surprised...

it is very good, almost tastes like some home made stuff I have made. Give it a try and make vegetable beef soup.

 
Several ideas

Wrap in eggroll wrappers an add in anything you want to make it whatever you want and add a sauce or serve a dipping sauce - peppers and onions with provole cheese for philly egg rolls, hot peppers, beans, monterey jack cheese for mexican egg rolls, serve with bbq sauce and slaw.

 
And Collage Inn is really excellent too. Since I have been doing Apron's

at Publix I have come to really respect some of these stocks and broths. I'm still making my own chicken stock and always strive for the "gold" as Richard in Cincy calls it but I sometimes wonder why?

That's good to know, I like to make pot au feu in the winter and a purchased stock would help

Speed things along. And, I don't know about you, but I prefer French onion soup with beef broth.
