What do you serve with chili to make a meal?

We treated ourselves to our favorite shortcut chili recipe (from early in our marriage), and served it over corn chips instead of elbow macaroni as we usually do. Yummy. I made a mandarin orange salad with tarragon vinegar dressing, apple slices and corn on the cob. Didn't do corn muffins because of the corn chips. Shared a Salted Caramel Porter smileys/wink.gif Colleen

C&J's Shortcut Chili over elbow noodles or corn chips

C&J's Shortcut Chili ~3 dinner servings
1 15 oz can Hormel Chili, no beans
1 16 oz can Bush Chili Hot Beans, mild
1 14.5 oz can diced tomatoes, with juice
1 15.5 oz can black, kidney, pinto, or canellini beans, drained and rinsed
Elbow noodles or corn chips
Garnishes
Cheddar cheese shreds, sour cream, jalepeno's
Combine first 4 ingredients in a saucepan or microwave container and heat. Serve over elbow noodles or corn chips.Top with cheese and garnish of choice. Double or triple for a crowd.

I would probably serve it over pasta with lots of assorted toppings

like chopped onion, shredded cheese and some salsa.

I would also make cornbread to go with it. Guacamole and chips could sub for the toppings.

rice, corn bread, salad, french fries, slaw, hot dogs, tortillas

toppers include: Cheddar cheese, mexican cheese, sour cream, jalapenos, avocado, slaw, finely chopped mild onion.

and you can also make a pretty good burrito from chili with a flour tortilla.

Cornbread here too. And a watermelon salad because we like chili hot

I serve chili with avocadoes, cheese, maybe black beans, fresh cut scallions for

garnishing at the serving.
Then maybe have rice or angel hair spagetti to serve under it. Corn bread is good . The citrus salad would be good and I love the idea of a watermelon salad this time of year.
If not doing avocadoes for a garnish then maybe a tomato, cucumber and avocado and onion salad.
