What for dinner tonight?

Crockpot chicken with white sauce and sun-dried tomatoes. Broccoli and cous cous on the side. Smells great. Fruit salad for dessert.

Mayacoba beans (Peruvian, amarillo) cooked with ALOT of garlic . . .

and garlic Italian sausage. I might just pick all of those yellow cherry tomatoes outside the front door and throw those in there at the last minute, when the beans are nice and tender and creamy.

I am eating mine with chopped collard greens, to stretch the beans.

I would love to make some corn bread to go with, but I am afraid to because I always eat so much of it. . .

Daisy Martinez's Puerto Rican Yellow Rice and chicken cooked

with annato oil, sofrito, tomatoes, goya adobo seasoning and green olives.

Great question - we should post q's like this more often.

I too often find myself stalled of ideas on what to make on dinner on weeknights. Love your initiative, Dawn smileys/smile.gif

Ummm, just had a cup full for breakfast, heated with a big handful of raw spinach. . .

to cook in, a little salt, some ground chipotle pepper, a cuppa strong tea--my kinda breakfast!

Tonight I made Tuna Fish Macaroni Salad

It is really a family dish; comfort food. Box of elbow noodles, any vegies in the fridge cut up small, frozen peas / carrots, tuna fish, and mayo. My mom insists it needs dill, but we pass on that. Sometimes, my mom would add hard boiled egg, cut up.

True memories and comfort food during this nice weather!

Tonight is a vegetarian pizza from Papa Murphy's, because I have been cooking all week

and need a break. I did make a great green salad as a side and will add tomatoes and my home made pickled banana peppers to the pizza prior to cooking!

mmmm goulash! I was going to make it this upcoming week, but dh said that

he had beef every night on his business trip. I think he is beefed out. I am so in the mood for some goulash.... and a good snow storm! : )
