(hit return by accident) Pat_NoCal's recipe at link, although I usually make them on top of the stove, not in the oven, and they come out very good.

This time the milk got all curdled when it heated. The whole thing had separated into curds and water! What could have caused this, this time? Everything else the same.

And, is there a way to fix it now. Probably tasted ok, but looks kind of yeeeucky!

Is your oven too high? High heat will cause the sauce and cheese to separate, and that's less

likely on the stovetop.

Also, the kind of potato makes a difference. A higher-starch potato releases starch into the sauce, helping it hold together (the same as the flour in the sauce), whereas a low-starch potato, like a boiling potato, won't do that as much.

Was the sour cream a little off? Was the cheese good quality, and therefore likely to release more oil into the sauce?

Or maybe, heck, it was just one of those days!

 
Sorry I didn't make it clear - this was on the stovetop too. But I think you're

right - too high a heat. I rinsed them off and made a white/cheese sauce for them and it was a good fix.

Same cheese, Russett potatoes - and it was definately one of those days! ;o)

Oh my, I have scalloped potatoes in the oven right now too. I hope

mine will turn out good! I remember seeing Pat's recipe and I want to try it next time. It sounds really good. Good comeback on the potatoes!

 
The slow simmering in the oven is different than the sudden high heat on the stovetop.

Don't worry - I'm sure they'll be just perfect *g*

 
They were good not great. I tried a different recipe than I have used in the past

but it might have been the quality of the sharp cheddar I used. I used some good and some very good for the topping. I should have reversed it. I am making cheesy potato broccoli soup out of the leftovers today. No one ever knows how many leftovers they eat in my house. I made the garlic olives, which became tapanade, which became bagel cream cheese spread. smileys/smile.gif
