What is "brawn" (in the context of ham and sausage)? British friends, help!

I'm editing a "lexicon" of ham, sausage, and salami. (Hey, it's a living.) smileys/wink.gif The UK translator (from German) lists such things as duck and chicken "brawn."

My question is what we Yanks might call this... Is it just cold sliced meats? Cold boiled meats?

Thank you for any help!

Erin

Hi Erin, my Dad made the best brawn ever and it wasn't 'head cheese"......

Well, not that I remember.
I will look up the recipe for you if you like. I used to make it a lot but haven't for a few years now. It is aspic'd meat....I think it was ham and beef cooked till it can be pulled with a fork if I remember correctly and then set, slice it to serve, cold. Lots of cloves were used, I think.
Last time we made it my Mum actually did the cooking (about 4 years ago) on a visit here.

Crazy, huh? In this case, I'm thinking the photos are worth more than 1,000 words...

You should have seen those guys laughing at me. At first, it was going to be my job to do the sawing. Ugh, ugh, ugh. But of course, they still had to tease me...so I'd find that eyeball all over the restaurant. "Hey, Trac, can you grab me that cutting board?" Eyeball. "Hand me that knife, will ya?" Eyeball. Lunch? Don't even ask....LOL!

Thanks for the help, everyone... To be honest, I'm now curious to taste it! smileys/smile.gif
