What is Dutch-processed cocoa??? (nt)

Dutch-processed cocoa - cocoa powder treated with a mild alkalizing agent (such as baking soda)
cocoa powder - the powdery remains of chocolate liquor after cocoa butter is removed; used in baking and in low fat and low calorie recipes and as a flavoring for ice cream

Depending on how much cocoa you use... it can be worth a side-by-side taste test, in your favorite recipe, to see which you prefer. I found I far prefer cocoa that is natural (i.e., NOT-dutched) as the extra acidity can interfere with other flavors. I buy Scharffen Berger (no affiliation).
