Today, I defrosted bone-in leg of lamb. Tucked 20 small cloves of garlic into small holes made with a sharp knife, coated with evoo, fresh rosemary, and lemon juice. It is in the fridge until tomorrow, when we will put it on the rotisserie, A pile of new baby red potatoes will be sitting in a sheet pan, under the rotating lamb to catch the lamb juices. A side of sauteed beet greens and an ear of grilled corn to go with. Oh yum!

and she is providing the grilled meats.
I am bringing the Mexican corn salad and a cucumber and Vidalia onion salad made from a recipe that I got from Sandy/GA ages ago.

Sweet & Sour Vidalia Onions And Cucumbers

Amount Measure Ingredient -- Preparation Method

3 Cups Cucumber, Peeled, Seeded -- slice thinly
1 1/2 Cups Vidalia Onion -- slice thinly
1/2 Cup Carrot -- grated
1/2 Cup White Wine Vinegar
1/4 Cup Sugar
2 Tablespoons Fresh Dill Or 1 Teaspoon Dried
2 Tablespoons Water
Salt And Pepper -- to taste

In bowl toss together cukes, onions, carrots; set aside. Combine vinegar, sugar, dill, 2 tablespoons water, salt and pepper. Pour over cuke mixture, toss to coat. Refrigerate until ready to serve.

This weekend is crazy busy so I made three salads and DH is

throwing some meat on the grill to go with it. I made one green salad (romano salad, sugar snap peas and celery served with a mustard dressing), a pasta salad (boiled pasta, cherry tomatoes, cubed cucumber, cantaloupe and chorizo sausage served with a Provance herbs dressing) and potato salad (store bought!) - but I did pimp the store bought potato salad with a finely, chopped green apple to give it a "zing".
I also bought tzatziki (as I said, it's a busy weekend).

DH did put some chicken breasts on the grill last night, and tonight is copy-paste-repeat.

I also made brioche with raisins. They taste so good with coffee smileys/smile.gif

 
Your idea of apple in the potato salad is nice. When we were in Russia they often

put green peas in theirs which I also like a lot.

Maybe I should make potato salad for tomorrow - I used to make red, white and blue potato salad for Memorial Day when the kids were small. Tomorrow we will have peri-peri chicken and bratwurst on the grill, with sweet potatoes and sweet onions cooked in foil on the coals, plus a green salad. And maybe a potato salad. smileys/smile.gif

 
I love the taste of apple in potato salad. My neighbor adds pickled red beets...

It gives the potato salad a nice, pink color but it tastes great also. Come to think of it, I need to ask her for her recipe. Her potato salad is actually very good smileys/smile.gif

These baked beans were the best. I don't eat red meat and these beans were so good. I followed recipe exactly .
Also ,I made ATK's Egyptian Barley Salad. This was excellent.

With the chicken marinade, I used Bud Light (Yuk! I know! but it's all I had). Highly recommend using a dark ale next time.
, although fx liked the chicken=I also oven baked covered.

 
And here's a picture of the whole pie. Latticework was wonky but it was a decent save

I got so involved dealing with doing the latticework I forgot to add the sugar and butter, sooooo I ended up having to peel the whole top off to dump in the sugar and butter. The lattice top ended up not looking perfect but far better than expected considering. I just used the allrecipes recipe ( I need all American pie dough recipe) with the addition of a half teaspoon of tapioca, next time I might double that, but it actually isn't that runny. I added additional sauce to the plate in the last picture.
