What is everyone doing and or making for this holiday weekend?

Will be baking something....

I have 8 egg whites (made crack pie...recipe for Momofuku's dessert from the LA times) that need to be used. Hoping to get some local strawberries and make a pavlova.

 
Tomorrow is picnic for MIL's birthday.

I'm making the oven-baked chicken (see my panic thread), tomatoes with fresh mozzarella, basil, and cucumbers, dinner rolls, and a chocolate cake.

Tuesday is my husband's birthday but we're celebrating Monday so we're grilling steaks, squash, and something else which I have just forgotten. I hate getting old. Oh, corn. And I will be making a fresh berry pie.

 
Hi everyone! I've missed you!!!!!!!!!! And I hereby put a POX on BestBuy's Virus Protection!

My goodness. It's been forever since I've been able to post. My 1-year old computer became infected with a creepy/crawly virus...and how odd, I thought...because I PAY YEARLY FOR VIRUS PROTECTION FROM BEST BUY, SO WHY DID THIS HAPPEN!!!

Stifle yourself, woman.

Anyway...the Geek Squad wasn't very efficient either. They couldn't find my contract online, even thought I had it there IN MY HAND. Then they complained that I hadn't brought my power cord in with the computer WHEN I WAS TOLD NOT TO! And so it sat for 2 weeks untouched. EVEN THOUGHT THEY HAD BOXES OF THE SAME COMPUTER SITTING THERE 20 FEET AWAY. ALL WITH POWER CORDS!

I'm not sure a POX is strong enough to vent my frustration.

And then, even though we got a store manager involved, they STILL CHARGED ME $230 TO SAVE MY DATA AND REMOVE THE VIRUSES. FOR WHICH, LET ME REPEAT....I PAY YEARLY FOR PROTECTION AGAINST GETTING!

Then there's work. This is the first day that I'm sitting in my house...in daylight...for over 70 days. Our software application for the British military is in the full throes of System Integration and Test and we're all working obscene hours. Many nights I've been at work so late that I just get a hotel room at midnight. It's nights like that that make me want to get one of our young software developers and get them to slip code into one of the tank's and have it POINT TOWARD BEST BUY!

So...that's how I am. Mostly just tired and cranky. Haven't baked/cooked anything in months.
In fact, I'm learning Pavlovian reactions to the microwave dinging in 5:88 min/seconds (yes...the 5 and 8 buttons are the only ones working on our work microwave) for Lean Cuisine's Shrimp Alfredo. One misses the joy of eating a meal that doesn't have to have plastic peeled off first, and eat off of a real plate with silverware that doesn't twang if you bend it.

Amanda's menu makes me feel like going on a picnic. Maybe. Definately hamburgs and hot dogs on

some sort of grill, depending on the weather, on Monday, after a parade. I missed the farmer's market because we had company this a.m., where I was going to buy more vegetables to go with them, but I'll figure something out.

Maybe just salt potatoes and corn and a salad with a great-sounding feta cheese dressing that I saw recently. And cucumber water - want to try that too...

 
I am making Sally/BR Oven-Fried Chicken . REC: Sally's Sort of Oven-Fried Chicken

All that talk about oven-fried chicken in Amanda's post. Since we are celebrating my step-daughter's birthday on Monday and she is 9 mos pregnant, I am making what she craves: Oven-Fried Chicken, mashed potatoes and gravy, biscuits, broccoli, fruit salad, Marie Callander's Chocolate Silk Pie and Meryl's Strawberry Cheesecake Trifle, and Strawberry Lemonade. I haven't decided what to have for appetizers, but I know I am going to make clam dip. It's an odd menu for Memorial Day, but my poor stepdaughter is so miserable, I just want to make her feel a little better; comfort food and all.

Edited to say: broccoli is changed to my sister's corn recipe and I absolutely love this chicken. It is exactly like my godfather used to make.

Sally's Sort of Oven-Fried Chicken

Amount Measure Ingredient -- Preparation Method

2 whole chickens -- cut up, or chicken
parts
flour
salt
black pepper
garlic salt or Lawry's Seasoning Salt

Pre heat oven to 350 F Dredge chicken with flour, salt and pepper to taste. Fry the chicken pieces in a mixture of canola/olive oil in equal parts, until golden brown (this is the only labour- intensive part of the recipe, but well worth the results...) As the chicken browns, transfer to an oven-proof casserole with lid (I like to put the breasts at the bottom) bake the chicken, covered, for 1 hour. Uncover, increase heat to 400 and bake for another 30 minutes to make it crispy
Sally's note: After the chicken is done, I like to make a gravy using the bits that stick to the roasting pan - just add some chicken stock, deglaze the pan well, add some flour and
voila'! Gravy! Biscuits are a must... smileys/smile.gif

Joyce's Frozen Corn

Amount Measure Ingredient -- Preparation Method1/3 cup sugar
2 teaspoons salt
2 teaspoons pepper
1 cup butter
1/2 cup water
10 cups fresh corn kernels

Preheat oven to 350 degrees.
Cut corn off the cobs. Put corn and remaining ingredients in a 9 x 13 baking pan.
Cover with foil and bake at 350 for 45 minutes to an hour.
Cool and place in freezer bags or containers.

We absolutely NEED to make this soon...

Since it's now only hubby and me, we rarely make it, but youngest stepson is with us (arrived today) for the whole Summer!

I can see Oven-Fried Chicken WITH biscuits on our menu soon.... and I may even blog about it (if I can take decent pictures, which is always a BIG iffy for me....smileys/smile.gif

 
German Chocolate Cake with Coconut Pecan Filling (CI, Jan 2005)

This cake is just SO amazing! I could sit with bowl in hand and eat ALL of the coconut pecan filling by itself.

 
My mom used to make a German Chocolate Cake from scratch

that was so good. I haven't made it, but maybe I will give it a try. I love it!
