RECIPE: What is lambic please? As in REC: Oatnmeal Stout Brownies

RECIPE:
Oh no...find a Whole Foods and you can buy a small bottle. I hate beer and I love lambic.

It's fruit based and the one I like is peach, there's also a raspberry. It's like a fruity fizzy wine cooler...not bitter like beer at all.

Well, let me be a bit clearer: the version I like is fruity and not bitter. Not sure if that describes all other lambics.

I even like saying the name: Pêche Lambic. Goes great with spicy Indian or vegetarian food. Defizzes over time so you are forced to drink the whole small bottle and act silly.

Lambic is like hard cider except the fermentation process is spontaneous. It's a specialty of

Belgium. Apparently the spores that provide the fermenation are only in very specific locations.

Here's some text from Wikipedia:

"Unlike conventional ales and lagers, which are fermented by carefully cultivated strains of brewer's yeasts, Lambic beer is instead produced by spontaneous fermentation: it is exposed to the wild yeasts and bacteria that are said to be native to the Senne valley, in which Brussels lies. It is this unusual process which gives the beer its distinctive flavour: dry, vinous, and cidery, with a slightly sour aftertaste.

The process is generally only possible between October and May as in the summer months there are too many unfavourable organisms in the air that could spoil the beer."

Thanks guys. Marilyn, I will start out at Whole Foods tomorrow and see what the have...

this is a good excuse to go to the BIG Whole Foods instead of the little neighborhood one! Problem is I always come out with a cart full of stuff that I don't know what I am going to do with............
