What is your first thought when a recipe reads "Jack cheese"?

ah, i Wiki'd it...both are Monterey Jack...Pepper jack is the same cheese with pepper flakes.

See...this is what happens when you go the first 15 years of your life having nothing but American cheese slices (which isn't even a real cheese) and then the next 40 years being afraid of cheese since it's 95% fat. Honestly, whenever I would see cubes of cheese with toothpicks at a party it was like seeing tiny blocks of radioactive plutonium.

 
"Pepper Jack" takes several forms in the southwest at least. Some have chopped...

...jalapenos, serranos and other common peppers mixed in.

The basic, cheapo stuff has pepper flakes.

Oh I'm sorry, I just assumed you knew that they were both Monteray.

And that is also why I don't pay attention to what is fattening and what is not! I eat what I want, and pay no attention to less fat on anything. I want food to taste like food. I just eat moderately all the time. I think it takes less of a good product to get better flavor.

 
Pepper Jack is wonderful to munch on. Sometime for another occasion,

try making a Morney sauce substituting Pepper Jack for the cheese called for.

It's a popular brunch topping for omelets, hash, eggs benedict, etc. here in California.
