What kind of cinnamon do you like to use?

I am soon going to need to get some cinnamon. I just got the latest Penzeys catalog and was looking to see which cinnamon was used in their recipes.

I figured the experienced cooks here would be a good place to get some recommendations. TIA

 
For regular use,Chinese Cassia, Where it's the star(cinnamon rolls, etc) Vietnamese Cassia. Penzeys

 
My favorite is the Vietnamese - just got a new bag!...

I only use it in my baked goods (no savory stuff), and I like the warm, rich flavor.

I believe that's the one that Penzey's recommending using less than what's called for in your recipes, because it's so much more flavorful, but I always use the stated measurement.

Love that cinnamon!

 
Have you tried Penzey's Korintje Cassia?

It's wonderful!

They have a spot at the Grand Central Market in NYC and they actually allow you to do a tasting.

This cinnamon is amazing.

 
Yes, there is a nice depth of flavor

in this cinnamon.

It was interesting to sample and compare the different types.

I did a tasting with my brother, "Charlie" and he also loved this one.

I work on an Air force base and we get our supplies from Govt svc. They have a really concentrated

air freshener in Cinnamon scent, and I am hopelessly hooked on it. I go "down the hall" just to get my cinnamon fix. I'm sorely tempted to pocket some for home. It is so much more fragrant than anything you can buy commercialy. I think I may need a 12 step program!
