What kind of yellow cheese do you freeze? I have frozen parmesan, shredded mozzarella, cheddar. Now.

I bought some Gruyere and didnt have time to use it and I am off in a couple of days for a

week in Rome so I want to freeze it and use it when I come back. Do you think it will be okay?

I am assuming yes, but wondering since it was

expensive.

 
I freeze cheddar and jack all the time. I use my Food Saver to vacuum and seal ALL my cheeses

and I reseal after opening each time, They stay fresh for months. I think freezing takes a lot of quality away from the cheese, so you might consider a Food Saver.

 
I freeze all kinds of cheeses. Gruyere freezes well. Loses just a bit of integrity but not much.

 
When I worked at a gourmet cheese shop, oh so many years ago...We were schooled that Gruyere

freezes beautifully...2 layers of saran wrap; one layer of foil...(This was before food saver).

 
Barb - that is how we are taught to wrap in culinary school

I have read the science behind it but there is something to it for all foods that perserves them the best. I think it's that plastic wrap still 'breathes' is a part of it.

We were also talking the other day about good old fashioned butcher paper. I recently found a package of ground venison that was probably 4 to 5 years old. You would not believe how little freezer burn was on it and how well it did. And everyone came out with similar stories about stuff wrapped in butcher paper.
