What to bring over as birthday lunch to go with margaritas tomorrow?

We were going to go out, but the birthday girl said she'd rather stay in (she has a 1 yro) and the one thing she said she wants is margaritas, that I can do, but trying to decide what I should make and bring over for actual lunch. Still have the bad ankle, so it needs to be fairly easy prep.

Thoughts?

 
Hmmm...you said 'lunch'. Subs, salads, chicken salad on croissants, phyllo wrapped Brie

With crusty French bread

 
A few thoughts:

What about braised pork or beef tacos? Then leave the meat with her & she can make enchiladas for another meal?

I'm thinking the braised meat is easy and won't tax your bad ankle, and it's simple to pull together. Braise a 3 or 4 pound shoulder, shred. All you need a a few taco fixings.

Or, if you're up for it, the enchiladas would be nice too...and easier to eat if the 1 year old is still up.

Frankly, if I had a 1 year old, I'd be focused on the margarita!

 
If you have a panini maker, I would pack up some pre-made panini sandwiches, have fun making them w.

different types of meat / cheeses / herbs, etc... (Just a few). Cut them small; so you can enjoy guessing what is inside as well as enjoy trying different sandwiches.
I would also bring an arugula salad or Joe's Avocado Salad.

Lastly, I would bring a fun muffin for the lil daughter.

You could also bring a big plate of Cemitas and just heat 'em up when you get there. And remember to bring extree margaritas. Did I say that? What about extra tequila? Okay then, you're good.

 
Taco salad would be nice. Easy on you and to transport and needs no last minute cooking.

Or another type of salad with Mexican or Southwestern flavors. It's been so warm here in the bay area this week that a salad for lunch is still a welcome treat.
