What to do with 20 fresh pineapple

My daughter is arriving home this afternoon with 20 fresh picked pineapple from the Del Monte plantation in Hawaii. I'm sure they'll eat most of it fresh and will freeze some but I was wondering if anyone had a recipe for making something that was better than these wonderful fruits in their natural state. I'm hoping to come home with a couple, myself. ha

I got online and found a great article on growing them from the tops. Think we'll be trying that, too.

Wow. If you eat all those your mouth is going to be sore!! The pineapple this

year have been unusually good--"golden". I make pineapple chutney.

 
Gayle, there is nothing better than the pineapple itself- served room temp- but

sometimes I macerate chunks with a little Triple Sec and chopped fresh mint as a side to grilled meats. Another thing you might not think of doing is to make pineapple kabobs, drizzle with a bit of light soy sauce and grill. Delicious!

I make salsas from pineapple. I freeze it too. Several places in Hawaii take the pineapple cores, cut into swizzle stick shapes and serve with tall drinks. Make smoothies too.

Eat as much as you can plain though- there is nothing that matches pineapple ripened on the plant.

by the way, if you try to grow pineapple be aware that it needs hot, sunny weather all year around- but if you can get a top to grow, good for you! Pineapple takes about two years to fruit.

REC: Pickled Pineapple
I've had this recipe for almost twenty years
and have never seen it or a similar one in
print. Pairing this pineapple with vanilla
ice cream is considered illegal in seventeen
states (it's that good!)

Ingredients:

Six 20-oz cans of pineapple chunks in juice
20 cinnamon sticks
4 cups sugar
1 & 3/4 cups white distilled vinegar
90 whole cloves
dash of salt

Drain the pineapple chunks, reserving the
juice and pineapple separately.

Combine the pineapple juice, sugar, vinegar,
cloves, and salt in a large pot. Bring to a
boil and boil for ten minutes. Add the
pineapple chunks and boil an additional
minute. Remove from heat, allow to cool, and
transfer contents to a one-gallon jar.
Marinate for two days. Remve most of the
cinnamon sticks which can turn the juices
dark if not removed. Transfer to pint jars
for gifts or to quart jars for really really
good friends! Serve over ice cream or pound
cake. This probably has other uses such as
serving with a baked ham, but I usually go
with coconut or vanilla ice cream.

Loved serving this with a plain pound cake. Ice cream would be good too, if you can eat it (I can't smileys/frown.gif

I've been cutting into chunks, freezing on a cookie sheet before bagging in ziplocks then adding to

smoothies. Just delicious. Also, grilled slices are really tasty.

 
Saw this on Nigella today & tried it: Grilled Pineapple Kebabs with Malibu Chocolate Dipping Sauce

She cut the pineapple into 6 long spears and stuck a bamboo spear into each one lengthwise, then sprinkled demerara sugar over each one (for carmelization) and grilled them till nicely seared and browned. I did this up until this point and it was delicious just like that. My very finicky kids and husband all liked them.

Nigella served it with a coconut-chocolate dipping sauce that was dark chocolate melted and mixed with equal parts cream and Malibu coconut-flavored liqueur. She used 125 ml each, but I don't know the amount of chocolate, and neither foodtv.ca nor Nigella's site are saying. I'm sure you could wing it, though. It sounded wonderful!

I did bring 2 home but think we'll just eat those fresh because it's such a treat! My neighbors in Ca who were Japanese American brought wonderful pineapple home to us whenever they went back to visit family. I haven't had any since and that was 24 years ago!

I'm passing the recipes on to my daughter. They are trying to figure out what they want to do with the 14 they have left. (they ate a bunch while on the island!) They are freezing some, I know.

Again, thanks all for the GREAT looking recipes! I think I'll be trying those with canned pineapple, though. Just can't resist eating these fresh!

Mimi, it does sound wonderful!! I've had grilled pineapple before but not like this....

I may have to get one of the Russel Stover's Easter Bunnies out of the freezer and try this. I don't think my DH has ever had grilled pineapple. He's a good ole' country boy! smileys/smile.gif

 
It could have been the Dole Plantation...one has better pineapple...

all I know is this pineapple is TDF!

Cathy - which is it that is so sweet?

And, what is that red plum sprinkle stuff they had for it? My dd really likes it but I like it plain better.
