What to do with 6 lbs of shredded and juicy red onion?

After shredding another 20 cups of zucchinis for the freezer, I ran through a bag of red onions that weren't going to make it through this heat. The onions are too wet to sauté.

 
I make French onion soup all the time, but with white onions. I wonder if red ones would work

 
Although I second the onion jam...good stuff! I have to keep my bro-in-law supplied smileys/smile.gif

 
Why too wet? You'll need to saute them for whatever you

decide--and today!!
French onion soup takes 3+ pounds. Jam is great--and it does keep in the fridge.
You could try spreading some on a cookie sheet, wrapping REALLY well and freezing. Then put in bags.

 
Juicy, as in onion juice from the Cuisenart shredder + the onion shreds

I'm intrigued by the onion jam but no bleu cheeses for DH. Soup? why not!

 
I would drain the onions in a collander, and keep the juice to add to the soup later. the onions

will brown better if not so wet, but that juice has to be good for the soup. could you freeze some in packets?
