What to do with all that zucchini: Zucchini Butter

So far I have made a number of different zuke breads, zucanoes, zucchini pancakes and

next up is zucchini lasagna-hopefully tonight and then Julia's recipe for ratatouille (thank you Joe!!) this weekend. I bought some striped zukes at the market this morning that are called tigger (yes like in Winnie the Pooh!). I love zucchini.......

Yes, exactly, a canoe! Slice in half length wise and scrape out all but maybe 1/4 to form

a shell. I fill with rice and whatever is in the fridge. This time it was brown rice, sauteed onions, chopped zucchini innards, mushrooms, and herbs all stirred together with some feta cheese crumbles, salt and pepper. Fill the zucchini shells and place in a pan to hold them, cover with foil and bake at 350 until heated thru.

 
will make these this weekend, using some leftover garlic bread for breadcrumbs

and some mozzarella and parmesan for the cheese. ( I know, who has leftover garlic bread??)
