What to do with alot of unripe tomatoes?

This is the first year that I had a bumper crop of tomatoes. Since I can only plant in containers, I don't usually get a boatload of tomatoes - but this year - all the stars aligned and I was picking ripe red ones every day.

Now - there's a lot of unripe green tomatoes on them and the nights are getting pretty chilling here in NJ. What can I do with them? I'm not into canning - so that's out.

Any suggestions?

Green Tomato Bread

3 eggs
3/4 cup sugar
3/4 cup brown sugar
1 cup olive oil or vegetable oil
1 tsp salt
1 tbsp vanilla
2 cups grated and drained green tomatoes*
3 cups flour
1-1/2 tsp baking soda
1/2 tsp baking powder
1 tsp cinnamon
1/2 tsp nutmeg
3/4 cup raisins
1 cup chopped walnuts

Beat together: eggs, sugar, brown sugar, olive oil, salt, vanilla, and green tomato.
Mix together: flour, baking soda, baking powder, cinnamon, nutmeg, raisins, walnuts
Gradually stir the dry ingredients into the wet ingredients. If too watery, add additional
flour. Pour the mixture into two well greased bread pans, or 4 mini loaf pans. Bake at 350F for approximately 45 minutes, a little less for the mini loaves, start checking with a toothpick after 30 minutes.

Pat’s notes: Delicious. Tastes just like zucchini bread to me. *Easy to grate in food processor on the large shred disk, then put in a strainer and press lightly to drain the majority of liquid from the tomato.

 
Chow Chow Relish

CHOW-CHOW OR VEGETABLE RELISH

4 lg. onions
4 c. chopped cabbage (you can put more)
4 c. green tomatoes, chopped
12 green bell peppers, chopped
6 red bell peppers, chopped
1/2 c. pickling salt
6 c. sugar
2 tbsp. mustard seed
1 tbsp. celery seed
1 1/2 tsp. ground turmeric
4 c. vinegar
35-50 pods hot pepper (according to your taste)
Total bell peppers should equal 6 to 6 1/2 cups.
Combine all vegetables in large bowl and sprinkle with salt. Let stand overnight. Rinse and drain vegetables. Put in large enamel saucepan. Mix sugar, spices and vinegar in bowl. Add 1 cup water and pour over vegetables. Boil for about 35 minutes and put in hot, clean jars and seal. Delicious!

 
Green tomato pickles

My mom used to make these. They were sliced very thinly and were quite crisp, as I recall.
