What to do with Eden Ume Plum Vinegar¿ Purchased a bottle today as it was a customer

requested item at our neighborhood market. To me it tasted very astringent, and a little bitter. Anyone have experience with it¿

Here's a description.

The pickling brine from making umeboshi plums with sea salt and red shiso, aka beefsteak leaf, that impart its ruby red color. A tart, salty, festive condiment with beneficial organic acids. Thanks, I did the research on it, but was so surprised by the taste, so strong and rather

off-putting. Since it was a customer request at our store, I wondered what anyone did with it in an actual recipe. Sometimes, those ingredients with the surprising tastes are excellent when combined with other ingredients. I love bold flavors but this one was a shocker!
I don't make pickles anymore...maybe I should try it as a marinade.
