What to do with smoked fish?

I was given a whole, 1 lb Kokanee fish that was smoked. I just don't know what to do with it.

 
saltine crackers and fork. make a spread w/cream cheese. put some in corn chowder. ceasar salad

 
First, I would divide it into 4oz. portions and seal tight (vac seal if possible) and freeze

what you don't want to use soon.
The ideas in the other post are good and delicious. Our son in law's new restaurant (high end oyster bar and local seafood-centric) makes a delicious risotto with smoked fish and served with a soft fried egg on top. It is truly lucious and decadent--and as described by the food reviewer, unusual use. LOL

Lucky you! Once you decide how much you will be eating "plain", divide the remaining into 2-3 oz portions (depending on the degree of smokiness), seal tight (as Charley suggested) and freeze very flat (for a fast thaw). I stir from the freezer, broken apart, into "just about" scrambled eggs, along with several chunks of cream cheese and thinly sliced green onions, cover and remove from heat to melt cheese and finish eggs. I have also added these 2 oz portions to soups, sauces, veggies, potatoes and casseroles in place of salt, for umami and also as a tiny protein addition to an otherwise meatless meal. Colleen

 
Mix it with cream cheese, capers, green onions, and fresh dill.

Refrigerate it to let the flavors meld. Serve with crackers or bagels.
