What were those little white globules in my favorite olive oil, Frantoia?

Now I know.

I love Frantoia Extra Virgin Olive Oil, cold pressed. Love it. Decades ago the wine steward at Whole Foods in Orlando told me this was his favorite olive oil. It's produced in small batches and bottled in 34 oz bottles that WF carried it in the wine section rather than with the rest of the oils and vinegars. I bought it there for years until they had to stop carrying it because they could not guarantee sufficient quantity to stock.

Recently I found it at World Market, an 80-mile round trip from my house. So I bought 2 bottles, storing one in my basement which stays around 50-60 degrees year-round (half buried in the mountainside.)

Last week, I was moving some other pantry items around and saw what looked like an alien invasion in my blessed olive oil! Check out the photos! I was seriously bummed because I thought an unopened bottle was totally wasted.

Today I queried the Googleverse and it turns out that it's just naturally occuring wax from the olives. I've got it upstairs now on my porch where it's 80 degrees. Let's see what happens.

UPDATE: It really was just wax or congealed oil due to the cold. Had it sitting out in the sun and all the little globules are gone. Thank goodness because I almost tossed this entire unopened bottle. Be sure to click on the photos to see the full image.
