What would be a good "binder" substitute for an egg? Mayo?

Started the makings of zucchini fritters, and saw DH used the last of the eggs, Grrrr.

Recipe calls for 1 cup cheese, 1 cup bisquick, onions and seasonings. and one egg!

Any suggestions greatly appreciated.

I actually did the flaxseed mix with a tsp of gelatin sprinkled on top, rested for 5 mins, stirred

in ad it worked like a charm! smileys/smile.gif
