The market in Harpers Ferry had the most awesome sandwiches

which consisted simply, only, of country ham slices (Jamestown type, sliced very thin) tucked inside a homemade soft roll. So good! I think about those little bites so often!

Our farmer's markets here have so many food booths that I don't bring lunch

How about some apple hand pies for dessert? The apples are still so good right now, I'm baking a regular pie tonight.

Sorry meant to say it won't be opening til April and its has about

25 booths. I live in a small place. So if you have some great ideas and or recipes I would love to start trying things out at home.

We have an Indian family who comes with all sorts of flat breads, dips, chips,

they sell everything for $5.00. Dip containers are generous, so are chip bags and flat bread packages. They are very busy all the time. Their products are very bold and flavorful. I love to cut the flat breads into wedges, toast them and serve with their dips.

I saw mini-lasagnes (in muffin cups, but no paper/liners) in some mag... Would love those! smileys/smile.gif

Sorry, Carol, I misunderstood what you were asking. The most popular booths at the market

here are the roli roti cart with roasted pork roast sandwiches, the Mexican booth that makes scrambled eggs, refried beans, tamales and tacos (and agua fresca), the oyster booth (shucked on the half shell) or BBQd. And the bakery booths. Most every booth offers a home made soda or drink with local ingredients, that might be fun to add to your list. Are you going to be able to bring a propane stove for hot foods? It's so nice to eat something warm in the morning while produce shopping. It sounds like a fun project, can't wait to hear what you decide!

(and I know Whidby Island, my pal's beau was raised there, we finished the last bottle of Whidby's this Christmas - sad it's gone.)

I will second this idea. There was a hummus stand in S.D.

that was always swamped at every market. They had different flavors and also sold tzizki and pita chips. He sampled the hummus in squeeze bottles (like ketchup and mustard ones).

A few things to think about; will you have electricity, how will you keep food cold/hot for safety purposes, what are the health food laws like, do you need to have a booth with three sides and hand washing stations, etc. just to name a few.

I will come up with some recipes and ideas for you later this weekend. You will enjoy it.

These turned out great. I am going to make "tamales"

using the six-well muffin pan and corn tortillas. There was a recipe posted for tamale bites, that I really wanted to make for Xmas, but ran out of time. A larger one done like that might be good too. I know my customers are going to love these.
Thanks again, Erin!
