So my friend gave me another eggplant and I ordered ground lamb from Safeway. They were out so I
used beef. I ordered the groceries last night and then this afternoon I got an emergency call from my friend who desperately needed a new prescription dropped off to him south of Market. So I left work early l, got the prescription, got to his place, dropped it off, said hi for a few minutes and then tried to get a cab back to my apartment to beat the delivery person for the groceries. The cab driver was very late but happily I met the grocery delivery guy at my front door, talk about great timing! I put together the dish and manage to broil all the eggplant without burning it, and also toasted pinenuts without burning them. I was starting to feel pretty invincible. Then I realized the casserole pan I was using was much too large and I wasn’t going to have three layers of eggplant, I was barely even going to have one! So it is now one layer but the components taste good. While I was putting the casserole together, I dropped a piece of foil that I had the toasted at pine nuts on. By some miracle the foil landed right side up and I didn’t even lose one pinenut! And I went to the container of foil to pull a new piece off to cover it all up to bake, and came up with 1 inch left. Erg. So I reused the foil that I had underneath the eggplant that was broiling, even though parts of it got a little bit burnt so I flipped it upside down so the clean side is facing the food. I’m hoping it won’t make a smoky mess in the oven. I’m really hoping that this dish works out, it’s a lot smaller than I thought it would be for this party but hopefully it will taste nice. My friend is going to bring pilaf and salad so even if no one else brings food We will have something good to eat that day. The hosts of this party usually forget about bringing food and rely on friends to do it instead, it’s a bit tedious but they have great wine and they’re nice people even though they don’t know how to cook. I really wanted a glass of wine with all of us, but then remembered I still had a bottle of cremasse from New Year’s that we never drank, it’s a Haitian sort of eggnog without the eggs and made with coconut cream instead. A glass of that went down rather nicely and I’m having another small glass while I’m waiting for the casserole to bake.
