What would you do with 10 lbs of bruised tomatoes? Mixed sizes; $2.00

I did not purchase, but the farmer said he would have more over the weekend, if I was interested... They were squished heirlooms, cherries, etc.

Not good for mozz/tom/basil salad

I was struggling cuz Steve's roasted toms should really be the same size.

What to do??

Or make gazpacho for now. Run the rest through a food mill and freeze the puree.

 
Funny you should mention that. I just told DH at dinner that I need him to come to the market

with me tomorrow morning. I want to buy a box of "seconds" tomatoes to make roasted tomato soup. I need him to carry the box! In the past I have paid $10 or $12. But so far this year they are running $17!!!! You are so lucky to get a bunch for $2.

Anyway,tomato soup freezes really well. And in the winter, I just love a bowl of tomato soup and a grilled cheese sandwich on a chilly Sat afternoon. It's the best!

 
I put my soft or bruised tomatoes in very hot water, when the skins crack

peel. Chop the tomatoes and put into a pan and start cooking. Stir with a wooden spoon. They break down so fast, especially heirlooms, and make a great thick sauce. You can add a pat of butter, or basil pesto, or fresh herbs, and use for pasta.

 
Sometimes several of my friends and I will split a basket of the

"overripes" at our farmer's market. They are actually just perfect right when you purchase them but need to be eaten immediately or they will be too ripe. Gazpacho is one of my favorite things to do with them too.
