Freeze it!

I have a bunch of stalks in my freezer. Cut the top foliage off and put the bottom part of the stalks into a zipper baggie.
Freeze for future reference.

 
Wow! nice crop! Cut the stems off as low as you can.

They will keep quite a while in a plastic bag (wrap like celery.) The green leaves make an awesome tea with ginger which is wonderful when the season turns cold. To use in soups and curries you will smash the hard bulb-like part and drop it in the broth/gravy. You can also slice the bulb (not really a bulb, but a thick gathering of the leaves) thinly and freeze - the flavor won't be as strong so you'll have to use more. Grind it with onion, garlic and ginger for a curry base.

barb_b, I took one that I "bought, then forgot", cut off the rotten end and shoved it in

the dirt in a potted ficus tree on the patio. Didn't the darn thing grow! The forgotten piece was 9" and I cut it down to about 4" long then shoved 2" into the dirt. Mine isn't as lush looking as Barb's (you got a beauty, there!), but it's ALIVE. And that's more than I usually get.

 
Barb, a friend who also likes to grow hers brought me a tiny plant this spring

from the neighborhood nursery. We had a very rainy spring and a cool summer, maybe that's what it likes?

 
I'm not sure about the cool weather. It's a main ingredient in Thailand

and SE Asia where it is always very hot and humid. I also grew it in my yard in Saudi Arabia and it just became to large. I grow it here in South Florida year long but I keep it in a pot so that I can control it's size. I love how it looks and it's one of my herbs that I don't use to often but want it when I want it. Another is the tarragon. I don't use it that often but I also love the beautiful flowers it puts out and how pretty it looks. I love my herbs.

 
Barb, if you can find some fresh, just put them in water and they will root.

I rooted two plants like that. It took one awhile, but it grew a bunch of roots and I just stuck it in the ground and kept it well watered. If you go to and Asian market you can usually find it quite inexpensive. Just root them and grow them. I never did it in a pot but it would make a really pretty potted plant surrounded by other herbs or edible flowers.

WOW! Thanks everyone. I am planning on harvesting in a week when I return from vaca. Do you think

it will mail well? Maybe wrapped in a damp papertowel and then inside a baggie? If so, and I am successful in harvesting I will be glad to send to anyone who wants to give one of these delicious recipes from Marilyn and Orchid a try!
